Trees laden, mango season is the perfect time to enjoy this tropical fruit that fills our baskets. For a real treat, try our smooth, creamy tiramisu, with flavors of the Caribbean!
A mango is full of natural goodness and potential, even when mature it still remains firm. Desserts that use raw mango are the best, as they allow us to truly appreciate the flavor. That is the case with this tiramisu, a sweet, fruity dessert that is the perfect finish for a dinner. Made in advance, it is very practical. A cool way to bring a tropical twist to this Italian classic.
INGREDIENTS (FOR 8 PEOPLE):
• 300 grams mascarpone
• 3 eggs
• 80 grams of sugar
• 1 vanilla bean
• 4 Julie mangoes or 2 American-style
mangoes (number approximate based
on size; the goal is to be generous)
• 1 lime
• 1 package of ladyfi nger biscuits
• Pineapple or multi-fruit juice
THE RECIPE
~ Peel the mangoes; cut them into small cubes. Sprinkle them with a little lime zest and a drizzle of lime juice. Keep them cool.
~ Separate the eggs whites from the yolks.
~ In a bowl, whip the mascarpone with the sugar and the contents of the vanilla bean.
~ Add the egg yolks and continue to whip the mixture.
~ Beat the egg whites to form stiff peaks.
~ Add them delicately to the creamed mascarpone.
~ Pour the cream into a pastry bag (will be easier to fill small bowls) and put it into the refrigerator
~ Fill a glass with the fruit juice.
~ In 8 small bowls, put some of the mascarpone cream into the bottom, add 2 soup spoons of mango cubes, 2 ladyfingers that have been dunked in the fruit juice, another soup spoon of mango, and cover with more cream.
~ Chill for at least three hours before serving.
Adorn with a sprig of mint, and enjoy!
