Very tasty raw or cooked, pineapple is perfect in a crumble. This dessert is the guarantee of great success for the beginner pastry chef. This irresistible crumble is made with fresh pineapple, flavored with lime and sweet spices that will bring out its flavor intensely. You can eat it cold for even more wonderful flavors, with a scoop of coconut ice cream or whipped cream.
INGREDIENTS
For 6 delighted gourmets:
• 1 ripe pineapple
• 1 lime
• 1 large pinch of cinnamon powder
• 1 pinch of powdered nutmeg
• 1 vanilla stick
• 2 +1 (60g) tablespoons of brown sugar
For the crumble:
• 125g of flour
• 125g of ground almonds
• 125g of cold unsalted butter
• 100g of sugar
GETTING THE CRUMBLE READY
– Mix all the dry ingredients in a bowl.
– Add the butter cut into small pieces and work the dough with your fingertips to get large crumbs.
– Keep in the fridge.
PREPARING THE PINEAPPLE
– Peel the pineapple and cut it in 4 lengthwise. Remove the heart that is a bit hard.
– Slice each quarter in 2 then dice the slices obtained.
– Let the pineapple cook for about 15 minutes in a large saucepan with 40 g of brown sugar, cinnamon, nutmeg and the vanilla stick once split and grated.
– Once it is cooked, pass it through a sieve and collect the juice.
– Reduce the juice for about 10 minutes with 20g of sugar and the lime juice, until you get a light syrup.
BAKING THE CRUMBLE
– Preheat the oven to 180°C.
– Place the pineapple in a gratin dish.
– Grate a little lime zest on the fruit, 2 or 3 thin slices of butter.
– Add the syrup, then arrange the crumble generously on the fruit.
– Finish with a few thin slices of soft butter on the crumble.
– Bake for 35 minutes.
When it comes out of the oven, the crumble is golden and sometimes, if you are lucky, a flavored caramelization will have formed on the edges of the mold.
